Vinifikation At Haute Cabrière, the von Arnim family has specialized in wines made from Chardonnay and Pinot Noir grapes. This wine is a tribute to the versatility of Chardonnay. Made using the traditional French method of bottle fermentation or "Méthode Cap Classique," this wine was fermented in oak for 8 months and then aged for another 5 years on its lees.
