Vinifikation The grapes come from two 20-year-old, trellised Chardonnay vineyards on Summercourt Farm on Simonsberg. The higher-lying vineyard (400 m) was harvested on February 13th, and the one at 350 m altitude on February 27th. After hand-picking and careful sorting, the grapes were gently whole-bunch pressed. The juice was clarified overnight at 10 °C and then spontaneously fermented in 100% used French oak barrels (225 l and 300 l). This was followed by natural malolactic fermentation with minimal bâtonnage. Maturation lasted a total of 10 months in oak barrels.
