Vinifikation The grapes come from old bush vines planted on weathered granite in the Joubertskloof area of the Swartland. These east-facing, irrigated vineyards contribute to an advantageously low pH. Harvesting took place in February in two passes. After harvesting, the grapes were cooled overnight to 10 °C and hand-sorted the following day, followed by gentle whole-bunch pressing. Neither sulfur nor other additives were added to the must. Natural fermentation took place in 225-liter and 300-liter barrels, followed by natural malolactic fermentation. Only then was the first sulfur added. The wine was racked from the gross lees at the end of November and bottled in December 2023.
