Vinifikation
After working in China for years, René and Birgit turned their backs on the Middle Kingdom, heading for South Africa. After the company René came to South Africa with was sold, they decided to establish a wine farm with an adjoining boutique guesthouse. Since 2009, the two have been living their dream, which René has had since he was fifteen, in idyllic Wellington. Named after the numerous Jacaranda trees found on the estate, the winery is South Africa's smallest estate winery. Despite increasing demand, the Reiners do not intend to grow larger, but prefer to continue to focus on making their wines even better. The wine was named after the partridges that gather in the vineyard early in the morning to begin their 'early shift' to eat the snails and beetles in the vineyard. The grapes were harvested in the early morning hours, pressed as whole bunches and left on the mash for 20 minutes. The juice was allowed to settle for 2 days and was then naturally fermented in temperature-controlled stainless steel tanks.
