Vinifikation Sustainable and responsible viticulture practices, working with organic fertilizers and spraying materials. Grapes are hand-harvested in the early morning hours when temperatures are still low. Temperature-controlled, open-top fermentation in small batches. Natural fermentation with indigenous yeasts from the grapes, aged in 300L and 500L French (85%) and American (15%) oak barrels, 1st, 2nd, and 3rd fill, for 15 months. Our wines are crafted in the most natural way to keep the characteristics of our fruit and soil alive in the bottle. Only once filtered before bottling. The artwork for our Harvest Range was inspired by photographs taken during the 2020 harvest.
