Vinifikation The viticulture for the Jacaranda Old Vine Chenin Blanc is carried out according to organic principles. This means, among other things, that vine care and harvesting are done by hand. Jacaranda refrains from using herbicides and heavy machinery to avoid damaging the soil. Guinea fowl, among others, take care of combating snails and beetles. The immediate proximity of the vineyard to the cellars also benefits the expression of this wine, as the grapes cannot be processed any fresher. Of course, winemaking also takes place under biological aspects. The grapes are harvested by hand in the early morning hours when temperatures are still low. The grapes are cold macerated for 2 days and then pressed as whole bunches. Natural fermentation with indigenous yeasts is initiated in 500-liter and 300-liter barrels and lasts approximately 7 weeks. Further maturation in the barrel with regular battonage lasts 10 months. Our wines are produced in the most natural way to preserve the characteristics of our fruits and our soil in the bottle.
