Vinifikation
The inspiration for my deconstructed Chardonnay comes from my conviction that the Elgin region possesses credentials that place it among the world's elite. To substantiate these regional qualifications, I set out to prove that Elgin has both a characteristic grape and specific "terroirs" that reflect intra-regional differences. To fully understand this, it is necessary to dig deeper into the DNA that makes up our region. To illustrate this, I decided to take the following steps. These 3 Chardonnay wines, each selected from a specific vineyard and an individual clone. Importantly, this is an ongoing story that will unfold in the coming years. The grapes were hand-picked on early autumn mornings, placed in small lug baskets, and directly tipped into a press, then gently pressed at 0.6 bar. The unclarified juice flowed directly into the barrel and underwent spontaneous fermentation followed by malolactic fermentation. The wine spent 4 months in the barrel before careful sulfuring and a further 7 months of aging before bottling. Exclusively handmade 228-liter Burgundy oak barrels were used, 50% of which were new.
