Vinifikation The production of the Kershaw Elgin Chardonnay utilized low-yielding Dijon clones CY76, CY95, CY96, and CY548, which were developed at the University of Burgundy in Dijon. The grapes were selected from 8 small parcels. With his award-winning Kershaw Elgin Chardonnay, Richard Kershaw is causing a real sensation in the wine industry, not only in South Africa but also on an international level. The grapes for this first-class Chardonnay were hand-harvested on an early autumn morning and transported in 10 kg crates, which were immediately emptied into the press upon arrival at the winery, where they were pressed as whole bunches. The pressing yield was kept low at 590 liters per ton of grapes. The juice flowed directly into the barrels by gravity alone (without the use of any pumps). No enzymes, yeast cultures, or acids were added to the unsettled juice, which underwent spontaneous fermentation. The wine matured for 4 months in French oak barrels before being sulfurized with great care and aged for a further 7 months in the barrel. New wood accounted for 42% of the barrels used here, with the remainder being second- and third-fill barrels. Each bottle was given its own unique serial number.
