CY 548 is a clone originating from cuttings planted in Corton-Charlemagne in Burgundy. True to its origins, the profile reflects a more stringent and robust structural profile, producing a pulverized stone texture and a razor-sharp acidity. The aromas tend towards citrus blossom, yellow apple, and in some vintages, frangipane. The wines are full-bodied, with a broad mid-palate. They require time to unfurl, as CY548 often exhibits excellent concentration, making them ideal for cellaring. Fine oat bran, often pithy, and the complexity gained from perceptible time in oak barrels add further nuance to the wine.

Vinifikation The inspiration for the Deconstructed Chardonnays stems from my conviction that the Elgin region is developing into a world-class wine-producing area. To substantiate these regional references, I set out to prove that Elgin possesses both distinctive grapes and specific "terroirs" (mesoclimates) that reflect regional differences. To fully understand this, one must delve deeper into the DNA that defines our region. To illustrate this, I decided to craft Chardonnay wines, each selected from a specific clone. The grapes were hand-picked in the early autumn mornings, placed in small baskets, and taken directly to a press, where they were gently pressed whole-bunch. The juice flowed by gravity directly into the barrels without settling. No enzymes or yeast were added, and the juice therefore fermented spontaneously. Malolactic fermentation was avoided, and the wine rested in the barrel for four months before being carefully sulfited and maturing there for another seven months. For the barrels, a small number of artisanal coopers were chosen, all from Burgundy, and only French oak was used.
