Vinifikation Our Sauvignon Blanc is the epitome of Klein Constantia – it is the pure expression of our terroir. In the 40 years since the first Sauvignon Blanc vines were planted at Klein Constantia, we have gained a deep understanding of our site and learned how to balance the vines. The Sauvignon Blanc vineyards range from an altitude of 70m to 340m, face east to south, and consist of Table Mountain sandstone and weathered granite. The wine is pressed from 38 different parcels. Selected batches are combined into a perfect blend that makes up the Klein Constantia Sauvignon Blanc. Harvesting takes place at 4 am to preserve the freshness of the grapes. Each parcel block is fermented separately so that the terroir can unfold before the wines are combined into a perfect cuvée. Various techniques were used to respect the characteristics of each parcel block. 80% wild fermentation, 20% were inoculated with non-Saccharomyces cerevisiae to increase complexity and reduce sulfur requirements by providing biological microbial protection instead of chemical protection. Some fermentations lasted up to 2 months due to natural fermentation. 10% were aged in neutral 500-liter oak barrels. The wine spent 6 months on its gross lees before being blended and bottled.
