Vinifikation Most of the soils suitable for agriculture in the Elandskloof Valley are on steep slopes. The Altima vineyards - which make up most of the non-viticultural mixed soils for Chardonnay and Pinot Noir - are planted on the following soils: Quartz sandstone, belonging to the Table Mountain Sandstone group, is found on the higher mountains. Well-decomposed shale soils, from the Malmesbury soil group, are predominant on the farm. These soils generally have a dark brown topsoil with a yellow-brown structure and less sandstone subsoil. They tend to have high water retention capacity, a high proportion of organic matter, and generally show no chemical limitation, leading to vigorous growth. Further down the valley and along the rivers are dark alluvial soils, which also show very vigorous growth. These are not suitable for wine grape production as they grow too vigorously, combined with a high risk of rot. The trellising system for Pinot Noir vineyards is unique. These are the only high-altitude Pinot Noir vineyards in South Africa planted using the "posted vine" ("stok by paaltjie") method. The trellising system for the Chardonnay vineyards is a vertical shoot positioning. The Pinot Noir and Chardonnay grapes for the Anthonij Rupert L' Ormarins Brut Rose are pressed together as whole bunches after harvesting – a unique method used by only 2 wineries worldwide. The fermentation temperature is 14-16 °C. The subsequent second fermentation takes place in the bottle, after which the lees remain in the bottle for 24 months. After disgorgement, the wine matures for another 5 months in the bottle before being released for sale.
