Vinifikation Block 30, nestled in a secluded valley bordering a lake on the L'Avenir farm, benefits from the cooling influence of breezes sweeping across the water. The homogenous, infertile soils restrict vine vigor, ensuring balanced development. This combination of a unique microclimate, moderate growth, and old vines yields small bunches with tiny berries and concentrated flavors. The 2021 vintage in Stellenbosch was moderate, with no heat spikes or rain, and was in many ways similar to the acclaimed 2017 vintage. After five hours of skin contact, fermentation commenced in temperature-controlled stainless steel tanks. The wine was then transferred to large, first to third-fill French oak barrels and left on its fine lees for 14 months. Regular bâtonnage was performed to naturally enhance the wine's complexity and mouthfeel.
