Vinifikation In the Polkadraai area, Le Chant's old Chenin Blanc vineyard offers a view of Table Mountain and False Bay. The influence of the nearby ocean is cooling and moderates the climate during harvest time. Work in the rows is minimal, as the grapes naturally receive enough sunlight to be harvested at optimal phenolic ripeness. The harvest takes place in the cooler hours to preserve the freshness of the fruit. This white wine is fermented in small stainless steel tanks, after which part of the wine spends 8 months in French oak barrels, while the other part remains in stainless steel tanks. To improve the wine's structure and enrich the palate, the wine is stored on its fine lees.
