Vinifikation In the Polkadraai area, the old Chenin Blanc vineyard of Le Chant offers views of Table Mountain and False Bay. The influence of the nearby ocean has a cooling effect and moderates the climate during harvest. Work in the rows of vines is minimal, as the grapes naturally receive enough sunlight to be harvested at optimal phenolic ripeness. The harvest takes place during the cooler hours to preserve the freshness of the fruit. All grapes are hand-picked and brought to the cellar, where they are gently gravity-fed into the fermentation tanks. After fermentation and subsequent maceration, the wine is aged in French oak barrels. After 13 months, a portion is transferred to cement tanks and, after a total of 24 months of maturation, it is bottled, where it was aged for another 6 months.
