Vinifikation The vines are sourced from vineyards in Raithby, Firgrove, and Jonkershoek. The "Reserve" status is only granted if the grapes and the resulting wine meet exceptional quality standards. Hand-picked grapes from older, lower-yielding vines are used. Fermentation takes place with a selected yeast strain at a controlled temperature. Following malolactic fermentation in barrels, the wine matures for 22 months in 225-liter French oak barrels, 62% of which were new.
