Vinifikation The Cabernet Sauvignon grapes are from bush vines in the Darling area. Well-drained soils and cool, south-facing slopes, not exposed to direct afternoon sun, create ideal growing conditions for this grape variety. The Merlot and Petit Verdot are grown in the Stellenbosch region, while the Malbec is grown in Botriver. These grapes grow on the slopes of False Bay and are exposed to the cool ocean breezes, which contribute to a longer ripening period and enhance flavour development. The grapes were hand-picked and sorted. Each variety was fermented separately at 25 to 27 degrees Celsius. Minimal intervention was used during winemaking, with regular punch-downs and pump-overs to extract colour and flavour. After fermentation, the musts were pressed, and malolactic fermentation was completed in 225-litre French oak barrels. Maturation took place with 40% first-fill barrels, the remainder in second and third-fill barrels. The components were aged separately for 16 to 18 months. Blending then occurred, and 3 months later the wine was bottled.
