Vinifikation The grapes are sourced from Elgin, grown on rose quartz soils, and were harvested at optimal ripeness and whole-bunch pressed, with the juice extracted slowly. The juice was settled for 48 hours and transferred to used Burgundian barriques and concrete eggs for fermentation and maturation. The wine was left on the lees for 10 months with regular "batonnage".
