Vinifikation 30% of the grapes for this wine are from Lismore’s Greyton vineyards, on east/southeast facing slopes at 320 metres altitude in the foothills of the Sonderend Mountain Range. The soils are deep decomposed shale. The other 70% are from vineyards throughout the Western Cape region, including grapes from the Helderberg, facing the cool False Bay on the Atlantic Ocean, and cool-climate vineyards in Elgin. Sauvignon Blanc is a varietal that expresses a very distinct and specific sense of place or ‘terroir’. The distinct minerality of this Sauvignon Blanc is a clear indication of the cool climate in which it is grown. Samantha O’Keefe loves barrel fermented Sauvignon Blanc. The wine is made in an ‘oxidative’ style. Older 600L barrels were used for fermentation and maturation, yielding richness, intense fruit, and complexity. 15% of the production was fermented in 600L concrete eggs. In both the barrels and the concrete eggs, extended lees contact contributed to the rounder mouthfeel and creaminess of this elegantly structured wine. As with all Lismore wines, balance is key. The crisp acidity common to New World Sauvignons has been balanced by a carefully chosen picking date and fermentation and maturation in barrels and eggs. A full-bodied, well-balanced wine was the goal.
