Vinifikation The Syrah is made from 30% grapes sourced from Greyton, grown on heavy, unirrigated shale soils, and 70% from Elgin, grown on sandstone and shale soils. Two of South Africa's coolest climates with extreme diurnal temperature shifts give us a Syrah that has a very distinct sense of place. One that tells its story in the glass. The grapes were harvested at optimal ripeness. 40% of the grapes were fermented in large 5000L fermenters with gentle pump-overs twice daily, followed by an extended 28-day maceration before running off the juice and pressing the skins and whole bunches in a traditional wooden basket press. This process allowed for a long extraction time, softening the wine and providing fruit expression and structure. The wine was racked into 225L, 300L, and 500L barrels where malolactic fermentation took place, and then aged for 12 months. 5% new French oak was used.
