Vinifikation Rooted in the oldest viticultural soils in the world, consisting of decomposed granite on the higher slopes of the Helderberg, a site that has proven itself to be Grand Cru. This vineyard enjoys the refreshing cool breezes of False Bay (Atlantic Ocean) during the day and cool night air flowing down the mountain, resulting in even ripening and good natural acidity. The macroclimate is maritime with cold winters and sunny, warm summers. This wine is made in a natural and biodynamic way, using no commercial yeasts, enzymes, or fining agents. It is also neither filtered nor cold-stabilised and may therefore show harmless deposits over time. The Ekliptika was aged for 24 months in 70% new and 30% used French oak barrels.
