Vinifikation
Rooted in the oldest wine-growing soil in the world, consisting of decomposed granite on the higher slopes of the Helderberg, a location proven to be a Grand Cru site. This vineyard benefits from the refreshing cool breezes of False Bay (Atlantic Ocean) during the day and cool night air flowing down the mountain, leading to even ripening and good natural acidity. The macroclimate is maritime with cold winters and sunny, warm summers. This wine is produced naturally and biodynamically, without the use of commercial yeasts, enzymes, or fining agents. It is also neither filtered nor cold-stabilized and may therefore show harmless deposits over time. The two vineyards have been carefully cultivated by hand to ensure maximum quality. Biodynamic (organic) practices are used, meaning no herbicides or chemical sprays were applied in the production of these grapes. The grapes were carefully hand-sorted before being naturally fermented for 18 to 20 days and then pressed. This wine matured for 24 months in French oak barrels and then 12 months in the bottle.
