The grapes for the Neil Ellis Jonkershoek Cabernet Sauvignon come from a young vineyard in the Jonkershoek Valley, which has only produced its third vintage. The red wine reflects the balance of elegance and power characteristic of this region. This is evident in the glass with its intense dark color, and the bouquet is equally complex, with aromas of blueberries and blackberries underscored by a hint of cedar. On the palate, the red wine, which was aged for 18 months in French oak, is fresh with fine, soft tannins. It is best to decant the Neil Ellis Jonkershoek Cabernet Sauvignon before serving, allowing its aromas to fully unfold.

Vinifikation This limited-edition wine showcases the unique character of specific vineyard sites and represents our finest quality. The Jonkershoek Valley and, in particular, the south-facing slopes are among the coolest sites in Stellenbosch. Fermentation is initiated in stainless steel tanks. The crushed grapes undergo a series of pump-overs. Further maceration is allowed before drawing off and light pressing. Malolactic fermentation was completed in new French oak barrels. This wine spent 18 months in 100% new French oak barrels.
