Vinifikation It springs from our vision of Oak Valley as an appellation within the Elgin Highlands and our search for new sites that produce exceptional wines. Tabula Rasa is single-minded, a single vineyard and a single clone. The grapes come from a handful of vines within a block, focusing exclusively on Chardonnay and Pinot Noir. Our mission is to create wines on a blank canvas that represent the ultimate expression of our terroir. The grapes are hand-picked from selected vines within our South Ridge High Density Blocks, placed in Lugen boxes, and carefully hand-sorted at the winery. 15% are fermented as whole clusters, while the remaining grapes are cold-soaked for 5 days before spontaneous fermentation begins. Color and aroma were delicately extracted by regular punching down of the cap. Malolactic fermentation took place in barrel, and the wine then underwent careful aging for 14 months in lightly toasted Burgundian oak barrels.
