Vinifikation
It stems from our vision of Oak Valley as an appellation within the Elgin Highlands and our search for new sites that produce exceptional wines. Tabula Rasa is single-minded, a single vineyard and a single clone. The grapes come from a handful of vines within a block, focusing exclusively on Chardonnay and Pinot Noir. Our mission is to create wines on a blank canvas, representing the ultimate expression of our terroir. The fruit is hand-picked from selected vines within our South Ridge Block, placed in lug boxes and carefully hand-sorted at the winery. Whole bunches are guided into the press and gently pressed to obtain only the best free-run juice and a very low yield of less than 600 litres per tonne. Spontaneous fermentation takes place in barrel, without the addition of yeast or enzymes, as the vineyard-specific, indigenous yeast contributes significantly to the wine's unique identity. Some malolactic fermentation occurs, but is largely avoided to keep the focus on the natural acidity. A careful approach to oak maturation with lightly toasted French oak from Burgundian coopers promotes finesse and balance, allowing the fruit to come to the fore. Barrel aged for 10 months before bottling.
