Vinifikation The unique characteristics of the Old Bush Vines Chenin Blanc include the grapes from which it is made. The vines were planted in 1973, making them two years older than the Vinoneers themselves! The 45-year-old bush vines are located in the Durbanville wine valley and are part of the Cape Town wine region. The grapes were hand-harvested in the cool morning hours at 22.5° Oechsle and over two days were sorted, destemmed, crushed, pressed, and the juice then allowed to cold settle. The juice was pumped into 12 barrels and fermented in a temperature-controlled facility at an ambient temperature of 16 degrees Celsius. The only exception was the original Vinoneers 500-liter French oak barrel (affectionately named "Makulu Makulu" by Etienne's cellar staff), which was fermented outside his office under the watchful eye of the winemaker! The wine underwent spontaneous malolactic fermentation in the barrel and was then left on the lees for 6 months without any sulfur addition. The wine was aged for a total of 12 months in French oak.
