Vinifikation Bartàs is a small word that carries great meaning. It is the French (Occitan) colloquialism for “to walk/fight through the bush/vineyard to find your way to the cliff edge”. It is a beautiful metaphor for Paul Jordaan and Pauline Roux’s wine journey and a lovely ode to Pauline’s French heritage. They found their way, fought their way along the cliff edge, and eventually jumped to embark on a new wine adventure. The Chenin Blanc fruit is sourced from Rustenhof, a small granite koppie called Mount of Sinaï (Hebrew: Mount of the Burning Bush”). The block is on shallow and warm granite soils in the Helderberg, the most southern part of the Stellenbosch region. The slope is planted from top to bottom with dryland bushvine Chenin Blanc, following the contour of the hill. From the top, you can see the waves breaking just a few kilometres away. The block faces directly into the prevailing south-easterly wind. Both the wind and the ocean have a phenomenal cooling effect in the summer months, as well as the general growing pattern throughout the year, making this the earliest harvest of the season. The Chenin Blanc fruit is from vines planted in 1978 and is hand-harvested before being returned to the cellar. It is whole bunch pressed into old oak barrels, and then undergoes a spontaneous fermentation. The wine matures for 12 months in 500-litre barrels before being bottled, unfined and unfiltered, with a low dosage of SO2.
