Vinifikation Desiderius Pongrácz is crafted in the time-honoured French tradition of bottle fermentation and is a blend of Chardonnay (70%) and Pinot Noir (30%) grapes, hand-picked from two selected vineyard blocks. The wine spent four months on its fine lees before being bottled for a slow second fermentation, which created the beautiful, elegant bubbles and brioche-like flavour. The rich complexity and classic yeasty character of the MCC develop over time due to extended lees maturation over 7 years. The combination of fresh fruit, vibrant mousse, almond, and rich buttered toast is a delight to the senses.
