Vinifikation The Sauvignon Blanc grapes for the White Blend are grown on two of our farms: Boskloof in the Agulhas area and Quoin Rock in the Stellenbosch region. At Boskloof, the vines grow on Bokkeveld shale, koffieklip, and gravel, and are constantly exposed to the cool Atlantic breezes. At Quoin Rock, the vines were planted almost 400 meters above sea level in decomposed granite, colluvial sandstone, and gravel and grow in a slightly warmer climate. The Semillon, which makes up the rest of the wine, is grown on the Simonsberg. The grapes are destemmed and gently pressed. After allowing the must to settle in tanks for up to two days, the juice is racked and inoculated to initiate fermentation. We ferment each batch separately so that the grapes can develop their own unique aromas and flavors. This philosophy of small-batch winemaking allows us to develop a complex and diverse wine. After fermentation, the wine spends four to six months on fine lees in stainless steel tanks. We stir the lees regularly to improve the volume and texture of the palate, while paying particular attention to preserving the wine's freshness and fruitiness.
