Vinifikation The grapes from different blocks of some of our best vineyards on the estate were crushed and fermented in open-top stainless steel tanks with regular punch-downs (4-5 times daily) followed by extended maceration. All batches are kept separate throughout maturation to allow the winemaker to make a careful selection of the batches and to ensure we maintain the high standards and exceptional quality expected from the Quoin Rock Bordeaux Blend. Matured for 20 months in 55% new French oak barrels, 45% in second and third-fill.
