Vinifikation The grapes were harvested on the slopes of Simonsberg, where they grow in north-facing vineyards that are cooled by an Atlantic breeze in the summer months. The vineyards were planted on granite soils resting on thick layers of slate. These iron-rich soils protect the vines from the very dry and hot summers and also allow for the development of powerful flavours.
