Vinifikation The close collaboration with the winegrowers in Swartland and Stellenbosch to obtain the best possible fruit at optimal ripeness and balance is the most important first step in the production of Rall wines. The vineyards are selected based on a combination of factors, but the two most important aspects are soil composition and vine age. Currently, the fruit for the two wines comes from 10 different vineyards, mainly in the Swartland region, with decomposed granite being the main soil type for the white wines. The grapes for the Ava Chenin Blanc come from around Kasteelberg and Riebeeksrivier. Gentle winemaking is only possible when the vines yield little and growth is balanced. This also means that no acidification or addition of yeast or nutrients is necessary in the cellar. The white grape varieties are pressed as whole bunches in a small basket press and transferred to barrels with minimal settling and SO2. Here, natural fermentation takes place, after which the wines age on their lees for 10 months before being blended and bottled.
