Vinifikation Hand-picked, destemmed, 30% whole berries. Fermented in open-top oak fermenters, spontaneous fermentation with a combination of gentle pump-overs and short punch-downs. No additives, no cooling. Extended maceration. Light basket pressing. Aged for 23 months in 225-liter barrels, 30% new, followed by three months in stainless steel tanks, then an additional 21 months of bottle aging. Total aging time before release: four years.
