Product Description:
The nose opens with initial notes of orange blossom, lemon, and pear revealing notes of white peach and golden, delicious apples. The stony-clay qualities of the amphora become evident as it lifts the cool and fresh palate of this beautiful wine. Notes of quince, honey, and almond are buttressed by a vibrant acidity that in turn is well-balanced by a soft roundness on the finish. This is a truly beautiful wine where the whole is definitely more than the sum of its parts.

Vinifikation In certain vintages, when conditions allow, we harvest a small portion of one of our Old Vine registered vineyards for this very special project. In 2017, the grapes were whole-bunch pressed and filled directly into two barrels and one clay amphora. The must fermented in a cool cellar, and the resulting wine was left there for further maturation. In December, we tasted all three vessels and selected only the amphora to be bottled. The wine was racked and bottled without any fining, filtration, or SO2. This is a truly remarkable wine.
