Vinifikation The approximately 60-year-old un-irrigated vines grow at an altitude of 708 meters above sea level on the weathered granite soils of Piekenierskloof, which played a strategically important role in the Boer Wars. This location near Citrusdal has emerged in recent years as the prime location in South Africa for the world's most widely planted red wine grape, Grenache. The Soldaat bears a purple wax capsule, the color of the highest military honor. A homage to the wines of the southern Rhône, but less massive and significantly more fragrant. Not as alcoholic as often, transparent in color. Grenache tends to overproduce, and in many ways, its great former decline can be attributed to this fact. But when a vineyard ages and is planted in a less forgiving location with a lower fruit load, it can compete with the most elegant and sophisticated red wines of the Mediterranean climate. The grapes are fermented in a concrete tank with 60% whole clusters and 40% destemmed. Fermentation lasts about 30 days on the skins, after which the wine is pressed. The Soldaat is then aged on its lees for another 12 months in concrete tanks.
