Vinifikation The approximately 60-year-old, unirrigated vines grow at 708 meters above sea level on the weathered granite soils of Piekenierskloof, which played a strategically important role in the Boer Wars. This location near Citrusdal has, in recent years, emerged as the prime spot in South Africa for the world's most widely planted red grape, Grenache. The Soldaat bears a purple wax capsule, the color of the highest military honor. It's a tribute to the wines of the Southern Rhône, yet less massive and significantly more aromatic. Not as alcoholic as often, transparent in color. Grenache tends to overproduce, and in many ways, its great former decline can be attributed to this fact. But when a vineyard matures and is planted in a less forgiving location with lower fruit loads, it can compete with the most elegant and sophisticated red wines of the Mediterranean climate. The grapes are fermented in a concrete tank, 60% as whole bunches and 40% destemmed. Fermentation lasts about 30 days on the skins, and then the wine is pressed. The Soldaat is aged for 8 months on the lees in concrete tanks, racked off the lees, and then transferred to another concrete tank where the wine ages for another 4 months.
