The 2020 Guinea Fowl Red shows a plethora of dark fruit aromas on the nose, such as blackcurrant, plums, and crushed blueberries, supported by notes of freshly roasted coffee beans and dark chocolate. The palate is beautifully weighted, with a dense yet fine-grained tannin structure.

Vinifikation All components were harvested separately at optimum ripeness. The grapes were then destemmed, but not crushed, instead remaining whole to allow for softer extraction. Fermentation occurred separately in open-top fermenters using a combination of punchdowns and pumpovers, with extraction focused on the first half of fermentation. Upon completion of fermentation, the grapes were gently pressed and the wine underwent malolactic fermentation in tank before being aged in oak barrels for 12 months.
