The 2017 Private Collection Cabernet Sauvignon was in many ways superior to the famous 2015 vintage and this wine is testament to that. As is typical for Cabernet Sauvignons from the Polkadraai Hills, this wine possesses incredible freshness and elegance, even though the tannins are still young and firm. Beautiful aromas of tobacco leaf, plum and blackcurrant lead to a palate that is beautifully weighted and fine-grained.

Geschacksnoten Full-bodied & powerful, Elegant, Fresh & lively, Strong tannins, Aged in wooden barrels
Vinifikation The best selected blocks were harvested at optimal ripeness and spontaneously fermented in open tanks at 28°C. Regular punch-downs and pump-overs were practiced, with 2 - 3 weeks of skin contact after fermentation. Aged in 300-liter French oak barrels, 40% new, 40% second-fill, and 20% third-fill.
