Product Description:
The wine has a bouquet of ripe red fruits such as plums and dark cherries, with earthy complexity yet still expressing minerality. The fine acidity gives the wine excellent freshness with a well-integrated, ripe and seductive tannin structure. With a minimal intervention approach to winemaking, such as natural fermentation and only two "punch downs" daily, silkiness and elegance are preserved.

Vinifikation The 5 Merlot clones of the 3-hectare Mount Bullet vineyard show unique characteristics and features every year. Reason enough to capture this classic expression in the bottle. The clones come from various plots of Mount Bullet, and the grapes are picked, cooled, destemmed, and sorted in several passes. A cold maceration for 3 to 6 days at 8°C follows, and then the mash is spontaneously fermented at 26 to 30°C. Malolactic fermentation is fully completed, and the Black then matures for 20 months in 50% new Bordeaux barriques.
