Vinifikation The grapes were harvested at optimal ripeness, destemmed, and pressed in stainless steel tanks. After two days of maceration, alcoholic fermentation began with regular punch-downs to extract color, aroma, and tannin. Malolactic fermentation took place 20% in neutral French oak barrels and the remainder in stainless steel tanks with oak staves to intensify flavor and length.
