Vinifikation The base wine for the Sauvignon Blanc Sparkling is produced using the traditional method, harvested by hand and gently pressed as whole grape bunches with low pressure to avoid extracting any bitter phenolics. The juice was settled overnight and cleanly racked before fermentation. Fermentation took place at low temperatures in stainless steel tanks and lasted three weeks. After the first fermentation, the wine was stabilised and prepared for the second fermentation in the bottle. The second fermentation in the bottle lasted three months.
