Vinifikation Harvested from a 34-year-old Shiraz block planted on clay soils in Bottelary. A small withered patch in this vineyard was replanted every year because the vines died, but to no avail - the last solitary survivors in the murderous clay soil were now harvested separately, yielding low yields with intense blueberry aroma. The grapes are harvested between 24° and 25° Oechsle. 58% of the grapes are fermented as whole bunches, the rest are pressed into open tanks where they remain in skin contact for 6 days and are manually punched down. A gentle basket press with 17% fresh stems allows for a soft extraction of dense, dark flavors before 12 months of barrel maturation in older 500l French oak barrels. Minimal intervention allows for the true expression of the grape.
