Vinifikation Old vineyards are believed to be very similar to old people. Most of them have found peace within themselves – it is our job to show the world the elegance such inner peace can bring. The grapes for this wine are from a block of old bush vines (Cinsault) planted in 1972 on decomposed granite on our property in Bottelary. It is dry-farmed, and like a camel, can last an entire summer without water. A unique winemaking process, with the ‘Basket Child’ created through gentle basket pressing, results in an exceptionally aromatic rendition of a staple of the South African red wine scene. This wine has a paradoxical character: dense yet light, ripe yet refreshingly fresh.
