Vinifikation The Chenin Blanc B28 from the Stellenrust winery in the Cape is a dry white wine that truly "has it all." This is primarily due to the vineyard where the grapes originate: Block 28. Unlike the farm's other Chenin Blanc vineyards, which are more exposed to the afternoon sun, Block 28 particularly benefits from the morning sun. Both the temperatures in the vineyard and the UV radiation are comparatively low, allowing the wines to develop vibrant acidity, class, and elegance. The bush vines are also over 40 years old and rooted in granite-rich soils, which in turn contribute to the wine's refined flavor. Harvested at optimal ripeness, the juice remains in contact with the grape skins overnight before being drained into French oak barriques. The barrels are four to six years old and impart very little flavor to the wine. However, the Stellenrust winemakers are not focused on the oak itself, but rather on the texture that the barrels impart to their Chenin Blanc. The barrel fermentation with wild yeasts lasts five months, followed by another two months of aging in the barrique. The result of this well-conceived process is an outstandingly crafted Chenin Blanc whose full potential has been realized.
