Vinifikation The grapes are harvested from a selection of older bush vines - all over 30 years old. Syrah, Bordeaux varieties and Pinotage from Stellenbosch, Grenache from Piekenierskloof and Cinsaut and Carignan from Swartland. The grapes are harvested between 24° and 26° Oechsle, not crushed, and fermentation occurs spontaneously with wild yeasts. 34% are fermented as whole bunches. The wine is then run off the skins by gravity into the cellar floor where the barrel room is located. Here malolactic fermentation is completed and the wine matures for about 18 months in 20% new French oak barrels. After this, the best barrels are selected, blended and put back into barrels for another 6 months.
