Vinifikation The legendary "Next FN Level Chenin Blanc" originates from Parcel 25, a block of gnarled bush vines planted in 1980. It's an ancient single-vineyard, planted with Chenin Blanc on the southern slopes of the Bottelary Hills. The grapes are harvested at 22 and 24° Oechsle and spontaneously fermented in barrels. Fermentation lasts approximately (months), and the wine then rests on its lees for another month to gain more complexity. Further aging takes place for 9 months, 90% in French oak barrels and 10% in Hungarian oak barrels.
