Vinifikation With this wine, first bottled in 1999 at a small homestead on a farm in Swartland, the story of Eben Sadie begins. The Columella is and remains his masterpiece and can age extremely well. Like its white counterpart Palladius, the style, vineyards, and grape variety composition have changed over the years. It is now pressed from 6 grape varieties from 10 different vineyards. The Columella has become increasingly refined, dense, and self-contained. The berries are pressed in a basket press and then spontaneously fermented in large open vats for 3 weeks. It then ages for 12 months in used French barriques (5% new) and then another year in large foudre barrels on the lees, before being bottled unfiltered and unfined.
