Vinifikation The Kokerboom vineyard consists of 80% white Semillon and 20% Semillon Gris. They are harvested and pressed together simultaneously. This wine is one of the richest that Eben Sadie produces, with pure volume and massive texture. The Semillon ripens very well in this area due to the high sun exposure. The grapes are harvested in the Citrusdal Mountains, and it is a major logistical challenge to transport them to the cellar. The journey from the vineyard takes 4.5 hours, so the grapes only arrive at the winery and into the cold room at the end of the day. They are sorted the next morning and pressed within a 3-hour period, then filled into old wooden barrels for fermentation. Since the Kokerboom vineyard is poor in natural nitrogen and yeast nutrients, it takes 10 days for fermentation to begin and it finishes after about 6-8 months. By then, malolactic fermentation will also be complete. The Kokerboom remains in the barrel on its lees for the entire 12 months before being racked.
