Vinifikation Stagnation means regression, and Eben Sadie first bottled his Palladius in 2005. Since then, he has continuously developed the grape variety profile and vinification process, refining the style. Nevertheless, the early vintages, despite higher berry ripeness and barrel aging, are still remarkably fresh and can certainly continue to mature with proper storage. The current vintage consists of 11 varieties, which in turn come from 17 vineyards with granite and Table Mountain sandstone soils. It is, if you will, the South African counterpart to Mediterranean blends, especially from Southern France. Palladius is a unique wine, the only one of its kind produced this way, and in turn, one of the best white wines of the New World. It combines tradition, origin, experience, and vision. The grapes are hand-picked, sorted, and pressed as whole bunches over a period of 2-3 hours. The juice is spontaneously fermented in 725L concrete eggs and in 400L and 1200L clay amphorae. The fermentation temperature is very constant, as the ambient temperature in the wine cellar is 18°C throughout the year. Each grape variety ferments at its own pace, in some cases it can take up to 18 months, and each of them is vinified in the same vessel every year. The Palladius matures for 12 months in the respective vessels and is then transferred to large, old wooden barrels where it ages for another 12 months.
