Vinifikation The Skurfberg is part of the Citrusdal Mountains, and the word Skurfberg (rugged mountain) refers to the angular, rough appearance of the mountain. The soil consists mainly of decomposed sandstone formations from Table Mountain and tends to be very sandy. It is truly a magnificent location and highly unusual for such a warm and dry area to produce wines with such enormous texture and freshness. The grapes are hand-picked and cooled down. This is an essential step, as temperatures in the Swartland during harvest are 35°C and more, and pressing warm grapes presents a number of potential challenges. The grapes are whole-bunch pressed in a basket press over 3 hours and transferred to two older wooden barrels until spontaneous fermentation begins. Fermentation can sometimes take up to 6 months, with malolactic fermentation often not completed until the following spring. The Skurfberg is aged on its fine lees in wooden barrels for 12 months.
