Vinifikation This wine is the result of years of meticulous work by a winemaker deeply connected to his land, who analytically segments his vineyards. Only a very specific parcel of a large vineyard on Thelema produces the mint notes already announced in its name. It is believed that the grape skins absorb the eucalyptol released into the air by the eucalyptus trees growing there. After harvesting, the grapes were destemmed, hand-sorted, crushed, and fermented in stainless steel tanks. The wine was pumped over for 10 days, and malolactic fermentation took place in wooden barrels. After malolactic fermentation was complete, the wine matured for 18 months, with 40% in new French oak and 60% in older oak barrels.
